Sheet Pan Shrimp Fajitas Recipe
A perfect Mexican style dish for busy weeknights and easy meal prep! Fajitas are healthy, delicious and a core staple to add some spice to your life!

Sheet Pan Shrimp Fajitas Recipe
Fajita Ingredients:
3 bell peppers (red, orange & yellow), seeded & sliced
1 yellow onion
3 cloves minced garlic
1/2 tsp sea salt
1/2 tsp ground pepper
1/2 tbsp olive oil
5-6 small corn tortillas
Shrimp Ingredients:
1 lb fresh shrimp, peeled and deveined
1/2 tbsp olive oil
1 tbsp chili powder
1/2 tsp cumin
1/2 tsp onion powder
1/2 tsp garlic powder
Optional Fajita Toppings:
fresh salsa
cilantro
Greek yogurt
avocado
lime

Directions:
Preheat to 425°F line 2 baking sheets with parchment paper.
Toss bell peppers and onion with garlic, salt, pepper, & olive oil. Add to sheet pan and cook for 10-12 minutes.
While pepper and onion mix is cooking, toss shrimp in olive oil, chili powder, cumin, onion powder and garlic powder.
Remove pepper and onion mix from oven, toss and push to side. Add shrimp to other side and return to oven.
Cook for another 10 minutes or until shrimp is no longer translucent in color
Serve shrimp and fajita veggies in a warmed tortilla with toppings of choice
